Perhaps at some point in his past, Thanos crossed paths with the TVA or heard about them in some way. However he found out about them, he would have discovered the sacred timeline and could well have seen the Snap in his future.
In other words, while the Avengers did create new branches in the timeline, they then pruned them, in a fashion. The TVA chose not to interfere in the Avengers' actions because they knew these new branches would be erased by the Avengers themselves.
Against Dormammu, Thanos without the Infinity Stones is already dead; it's only a matter of time. But Thanos with the stones? It all depends on where the battle is fought. In the Dark Dimension, Dormammu can win nearly any fight.
Thanos Feared an Attack From Odin and He Might Have Been Planning One. However, it's possible that Odin kept his kids in the dark because he was preparing to take on Thanos all along.
