Beskar is tough but not invincible. As seen in the Mandalorian series, they melt the Beskar element to forge their Beskar armors and weapons. So, Beskar can be melted after all.
The Darksaber was also capable of parrying a blow from a lightsaber, with the blades being drawn to each other in an almost magnetic pull. Like other typical lightsabers, the Darksaber could not cut through pure beskar, however, it was capable of heating it to the point of turning red.

The purest form of beskar was capable of repelling the strikes of a lightsaber for brief amounts of time, and could withstand direct blaster fire. Pure beskar could still be damaged by weapons also made out of beskar; because of this, making weapons out of beskar was considered illegal by the Children of the Watch.
The problem is that Beskar is a material extremely good at dissipating heat, which in turn makes it hard to a lightsaber wielder to melt it, as the opportunity to keep appling heat to the same spot in the Beskar for sufficient time to melt it doesn't come by easily, but it is not impossible.

The high melting temperature is consistent with the nice acoustic properties of beskar (as seen here, in S2E7), and its extreme mechanical toughness.
