A single blaster bolt is way more powerful than any conventional bullet, apart from maybe explosive ammunition. In the films we see when blaster bolts impact walls and other objects they blow out huge chunks and create large clouds of vaporized metal.
Particle beams as beam weapons are theoretically possible, but practical weapons have not been demonstrated yet. Certain types of particle beams have the advantage of being self-focusing in the atmosphere. Blooming is also a problem in particle-beam weapons.

I think your real question is about the lack of real world, metal bullet firing firearms in Star Wars. Those exist, they're called slugshooters. In universe they're rare and not widely used. Blasters are just easier I guess, and you don't have the ammo worries of bullet guns.
