Actually, Dooku is 20 years older than Palpatine. Usually the apprentice is young (with no experience, no training) while the master is older and has achieved some decent level of power and experience. Dooku was already a Jedi Master when he left the Order.
But no, Dooku is born in 102 BBY and Palpatine in 84 BBY. Weird... It doesn't help that Dooku is more often seen in combat/action and thus he seems more fit than Palpatine(when he isn't spinning like a Beyblade, wielding a lightsaber).
Before Dooku was a Sith, he was an esteemed Jedi Council member. As Windu's senior by 30 years, he saw Mace grow up and mature in the Jedi Order. That's why he referred to Windu as an “old friend” in this comic.

In material that is now considered Legends, Qui-Gon is even described as a Gray Jedi. Additionally, the term has also been applied to Force-sensitives who aren't affiliated with the Light or Dark side of the Force. Quite literally, these Gray Jedi don't see things in black and white, or light versus dark.
