Dumbledore knew a lot about magic, including dark magic, enough to know not to use it, especially for such a purpose as to preserve your soul or get rid of a part of it due to guilt. In the end, Harry Potter fans will believe whatever they want, but Fawkes was definitely not Dumbledore's horcrux.
Fawkes left Hogwarts, possibly becoming a wild phoenix. Shortly before his departure, Fawkes conjured a flame which engulfed Dumbledore's body and reformed into the White Tomb. Fawkes is never heard from again, as Harry noted that he knew that the phoenix left Hogwarts forever.
Fawkes served as Albus Dumbledore's messenger and his constant companion, forming a close bond with the elderly wizard. Fawkes was also affiliated with Harry Potter and the members of the Order of the Phoenix and was the inspiration for its name.
In the next year at Hogwarts, the Hat also played a critical role in Harry's success against the Basilisk. Fawkes had brought the Sorting Hat to Harry's aid in the Chamber of Secrets. This provided him with Godric Gryffindor's Sword, which Harry used to slay Slytherin's Basilisk.
We are not told what Dumbledore did to earn the phoenix's loyalty, but in likelihood, he found Fawkes in a vulnerable situation just after a rebirth and took care of him. Fawkes was unshakeably loyal ever since and become Dumbledore's friend, pet and defender.
Harry was a "hatstall" during his sorting because the Sorting Hat could detect the shred of Voldemort's soul within him, but couldn't recognize what it was. Instead, the Hat could only discern the dominant traits of the souls he mistook as being wholly Harry.
Because once Dumbledore died, Fawkes left the castle. Dumbledore was the only thing tying him there essentially, so without him he was free to go. That's why he didn't come back to save Snape.
Dumbledore explains to Harry in book 4 that since both wands contained a tail feather from Fawkes the phoenix, the couldn't face each other as they'd refuse to destroy each other pretty much. Professor Quirrell was a temporary type of Horcrux while Voldemort inhabited his body, which is confirmed in the Wizarding World. It is possible that Voldemort created more temporary Horcruxes, such as the animals he possessed while in ghostly form.
