Gamora could potentially win assuming she has a blade that can effect him. Really depends how Thor fights, since he's bloodlusted he's going to charge in with a hammer strike which is really the worst possible thing he could do. She would cut him apart or just behead him. Gamora blitzes and one-shots.
Mantis would only beat Gamora if she managed to catch her off guard & used her powers to subdue her by putting her to sleep but in terms of overall ability & skill Mantis could not keep up with Gamora.
Either power would be effective, but combined Star-Lord is able to generate the materials needed to defeat Superman from a process that in and of itself could defeat Superman.
