The philologist Susan Robbins writes in Žmogus ir žodis that with the words "I say to you, Gimli son of Glóin, that your hands shall flow with gold, yet over you gold shall have no dominion", Galadriel gives Gimli, alone of all the Dwarves, immunity to the dragon-sickness.
Despite this, Gimli's personality traits from the books are still present, and his attempt to destroy the One Ring is a perfect example of this. The moment humorously showcases the ring's near-indestructibility while also being the only instance of a character being completely immune to its corruption.
Is Gimli the only person who tries to destroy the Ring?
Gimli is the only one who physically attempts to destroy the ring. All the characters fall basically into three categories: Never touched the ring, but want to destroy it (Aragorn, Elrond, etc) Touched the ring, but want to claim it (Boromir, Frodo, Gollum, etc)
Indeed, the rings did not even turn them invisible; and the Dwarves were immune to some of the rings' more detrimental effects. It is believed that the Dwarves' natural hardiness, and the fact that it was only the more powerful Dwarf lords who possessed them, made them resistant to Sauron's control.
Gimli is not the last of the dwarves. This is a common misconception because Gimli is the only dwarf who gets a fair amount of coverage in the franchise. Lord of the Rings focuses its narrative primarily on the affairs of men, elves, and hobbits. Dwarves are a secluded race that lives in the mountains.

Why is Gimli unaware of Moria?
Gimli didn't know about Moria's fate because there had been no communication between Erebor and Moria for 25 years, and the Dwarves were hopeful and did not want to accept failure until there was certain news.
According to one theory (via Stack Exchange), Gimli did not know about the fall of Moria in The Lord of the Rings: The Fellowship of the Ring movie due, effectively, to poor communication.

What happens to Legolas and Gimli after the Ring is destroyed?

After the destruction of the One Ring and of Sauron, Legolas stayed for the coronation of Aragorn and his marriage to Arwen. Later, Legolas and Gimli went travelling together to Helm's Deep, visiting the Glittering Caves, and then later traveled through Fangorn Forest as Legolas and Gimli had agreed.
Though Gimli has no children, he is not the last Dwarf of Middle-earth. After the fall of Sauron, his people continued to thrive in the Lonely Mountain. Gimli made his home in Rohan, in the Glittering Caves of Aglarond, and many of his kinsfolk came with him.
