In that future, Seven was killed on a mission in 2381 and Chakotay died in 2394. The series finale left the couple's future open-ended; however, this storyline hasn't been mentioned in any follow-up iteration of Star Trek, including Picard and Prodigy.
Captain Chakotay and the USS Protostar accidentally traveled through a temporal anomaly in the Delta Quadrant, and they ended up on Solum about 50 years in the future. Chakotay launched the Protostar in 2383, which landed him and his starship in the 25th century, about 30 years after the events of Star Trek: Picard.
However, that didn't sit well with Beltran (as noted in his tweet), and he turned down the role. Matalas told TrekMovie.com that he thought it was a "cool idea" because of Seven and Chakotay's relationship history on Voyager, but "we didn't go too far with it" because of Beltran.
What happened to Seven of Nine between Voyager and Picard?
Seven of Nine left Earth to become a Fenris Ranger.
After Voyager made it back to Earth (thanks to a lot of help from Seven), Seven wished to join Starfleet and was supported by Admiral Kathryn Janeway (Kate Mulgrew). Despite protests from Janeway, Seven's Starfleet application was rejected due to her Borg past.
Seven begins a romantic relationship with Chakotay during her holodeck simulation of Voyager. She became his love interest and went on several dates with him. After the Doctor removed the affected implants on her, she was free to become involved with the real Chakotay and the two finally began dating.

Why wasn't Janeway in Picard?
The reasons that Matalas was unable to include Janeway came down to budgetary constraints and not wanting to step on Star Trek: Prodigy's toes, but despite not appearing, Janeway was almost an honorary character in Star Trek: Picard season 3.
Kate Mulgrew prevented Janeway and Chakotay from becoming a couple on Star Trek: Voyager, prioritizing Janeway's likability and reputation. A potential romance between Janeway and Chakotay was also hindered by Starfleet rules, with Janeway focusing on her task of getting Voyager home.
Chakotay died in 2394, following Voyager's return, and Admiral Janeway visits his grave marker in that episode. This future was undone by the future Janeway travelling back in time to Voyager to return it to Earth sooner.
Seven's first conversation with Picard in Star Trek: Picard, however, reveals that her positive outlook on life has changed. After brutally losing her "son" Icheb and being betrayed by Bjayzl (who some say her former lover), it is clear that Seven of Nine has become hardened.
Although Kate Mulgrew's commitments to Star Trek: Prodigy prevented her from appearing in Star Trek: Picard, Janeway was mentioned throughout the spinoff's three seasons.
Neelix, a Delta Quadrant native turned USS Voyager crewmember, left the ship early after finding a colony of his own species living in an asteroid. It was a surprising choice for Voyager's final season and a rarity for Star Trek. It was an actual ending.
Her first encounter with the legendary Starfleet officer came in the Star Trek: Picard season 1 episode "Absolute Candor" after she saved La Sirena from a Romulan warlord. Admiral Picard and Seven quickly established a blunt, earnest rapport, with Picard eventually becoming something of a mentor to Seven.

In an alternate timeline experienced by Jean-Luc Picard in 2370, Romulus remained intact but had been conquered by the Klingons by 2395. Romulus was cut off from the Federation, except for the occasional medical ship allowed through to help stop an outbreak of Terrellian plague.
Robert Beltran was right to turn down the opportunity to reprise his role as Star Trek: Voyager's Chakotay in Star Trek: Picard season 2, as it was the best decision for the character.

Do Janeway and Chakotay get together in the books?
In the non-canon Trek novels, Chakotay promptly ends his relationship with Seven shortly after returning to the Alpha Quadrant and he takes command of Voyager after Janeway is promoted to Admiral. Chakotay and Janeway do consummate their relationship, but just before Janeway's untimely death.
A few years after Voyager's return to Federation space and Janeway's subsequent promotion to Admiral, Janeway commands the USS Dauntless in an effort to locate her former first officer Chakotay who disappeared while commanding the USS Protostar.
Unlike previous Star Trek series, Voyager's ending was not a surprise. The plan to end was already in place when producer Branon Braga left after season 6 to begin work on Star Trek: Enterprise.
While any feelings Janeway and Chakotay had for each other remained unrequited, the two characters certainly pursued other romances over Voyager's seven seasons. Chakotay, in particular, was given and variety of romantic subplots, eventually ending up in an ill-fated romance with Seven of Nine (Jeri Ryan).
We know that Captain Janeway was engaged to Mark Johnson. They lived together, and had an Irish Setter named Mollie. While Kathryn never forgot her man, Mark had accepted his lost love was gone forever. He remarried and went on with his life.
Tom Paris and Gath were Janeway's least significant and forgettable love interests, while Chakotay had the strongest connection with her. Janeway's relationship with Q was hilariously memorable, while her romance with Jaffen was tragically heartfelt.
