Hawkeye's finale made canon for the MCU something fans have been theorizing about for quite some time: not only is Hawkeye/Clint Barton's (Jeremy Renner) wife Laura Barton (Linda Cardellini) a former S.H.I.E.L.D. agent, she's actually Agent 19, also known as Mockingbird.
In the season finale of Hawkeye, Laura is revealed to be a former S.H.I.E.L.D agent with the codename "Agent 19," which is a reference to the codename the superheroine Mockingbird used in Marvel Comics. The Marvel Cinematic Universe has established another character, based on Mockingbird in Agents of S.H.I.E.L.D..
However, the fact that the mystery Rolex was hers indicates that she might be more than just a housewife. It's possible that she is a member of S.H.I.E.L.D. known as Agent 19. This theory is further supported by the fact that she was able to track down the watch using the signal it emits.

Why did Kingpin want the watch?
A simpler explanation is simply that the watch is valuable and highly sought after, and Fisk wasn't interested in acquiring the watch via a purchase, so he sent his men to a black-market auction to steal it.
First and foremost, knowledge is power. When Kate Bishop (Hailee Steinfeld) asked Clint why exactly the watch was so important in Hawkeye episode 4, he simply said that it had belonged to a close friend and had the ability to expose their cover.

Hawkeye and Mockingbird then would rekindle their relationship, with Mockingbird joining the Avengers again for a time, but after the two realized that too much time had passed, they agreed to divorce and go their separate ways.

Its mimicry is so good that an electronic device might be needed to tell the original sound from the bird's if it weren't for the mocker's habit of repeating things at least three times. The mockingbird gets its name from its ability mimic the songs of dozens of other birds, but it also has a beautiful song of its own.

Thus, to kill a mockingbird is to destroy innocence. Throughout the book, a number of characters (Jem, Tom Robinson, Dill, Boo Radley, Mr. Raymond) can be identified as mockingbirds—innocents who have been injured or destroyed through contact with evil.
It's the mystery watch. She didn't want it back because she liked the way it set off her wrist. Laura turns the watch over, and it has the insignia of S.H.I.E.L.D. on the back. No problem, Laura must have been another agent, and that's how she met Clint.
Hawkeye and Bobbi were married in the comics, so the number is likely just a reference to that. With the watch returned to Laura, Kate and Clint burn the Ronin suit on the barbecue, ending its dark legacy for good and potentially stinking up the garden for a while.
