Only the first Graphorn you encounter, as part of San Bakar's Trial, is used as a mount – any further Graphorn will be used as beasts that you can add to your Vivarium. All Graphorn will spawn at the single den we described above, and only one Graphorn will spawn at a time.

There is a female graphorn that can spawn at the graphorn lair at the south-east corner of the map. Only one graphorn spawns there every time the area resets, and its gender might be random. For me, it was female on the first try.
