It's important to note that when Baylan discusses his history, Shin immediately fills in his story by mentioning the Jedi Temple. It's likely she's heard his story before, and the fact that she brings up the Jedi Temple suggests Baylan was actually at the Temple when Order 66 occurred.
In the finale, Baylan leaves Shin to search for a rumored mythical power, one he's heard mentioned in old Jedi legends. In one of the final shots, he stands on a cliff near three crumbling statues, staring toward a light in the distance.

It could be revealed that this potential Jedi Starfighter Baylan owns was his own during his days as a Knight of the Jedi Order. He may have used his ship to escape the clones after Order 66 was enacted, either by fighting his way to it or being in the cockpit when the Order was given like Plo Koon was.
Baylan's great lightsaber and his modified version of Form V turned him into an enemy unlike anything Ahsoka had ever faced, which is precisely why she wasn't able to defeat him.

Why did Ahsoka only use one lightsaber against Baylan?
