The multiverse was touched upon in the show in the context of the Time Variance Authority or TVA, an organisation that has arrested Loki for interfering with what they refer to as the Sacred Timeline. In case you did not know, Loki's escape after stealing the Tesseract was not, as per TVA, supposed to happen.

Why did Odin collapse when Loki yelled at him?
Odin takes Thor's hammer Mjølnir and uses it to channel a burst of Odinforce that broke apart Thor's armor and pushed him into the Bifrost. After Loki angrily yelled at his adoptive father for not informing him of his true nature, Odin collapsed in shock.

Loki did try to fool him at first by swearing loyalty, but Thanos had seen Loki's deceptions before. Loki's plan to kill Thanos in Avengers: Infinity War was flawed at every point, and Marvel poking fun at such a great emotional scene makes the movie even better.
Simply because he doesn't know how. For him the Tesseract just opens portals. He maybe could use it to get away from Thanos, but with the new found love for his brother he couldn't do it.

Before he dies, Classic Loki laughs deliriously and shouts, "Glorious purpose!" Considering he's about to die, the move seems odd, but it's actually clearly rooted in Classic Loki's Marvel journey.
The finale of Loki season 2 shows Loki sacrificing himself to protect his friends and watch over the multiverse. This mirrors Loki's desire from The Avengers to rule Earth and bring peace to humans.
