The plot began from an alliance between Death Watch and the Sith brothers Maul and Savage Opress; Death Watch had been attempting to takeover the government of Mandalore for some time, while Maul hoped to create a base of power. Both sought revenge against Jedi Master Obi-Wan Kenobi and thus agreed to work together.
Maul then challenged Vizsla to duel to the death; according to Mandalorian warrior tradition, Death Watch would align behind the victor. After a fierce battle, Maul dispatched Vizsla with a violent beheading, and became leader of Death Watch and Mandalore.
Despite Maul claiming leadership over Death Watch, Bo-Katan and her Nite Owls refused to follow an outsider and made their escape. Despite their objection plunging Mandalore into a new civil war, Maul maintained his status as the rightful ruler of Mandalore until the Siege of Mandalore at the end of the Clone Wars.
Ultimately though, Maul remained driven by the desire for revenge, specifically against Sidious, the Master who disowned him, and Kenobi, the Jedi who defeated him.

What did Sidious do to Maul after Mandalore?
After defeating Maul and killing his brother Savage Opress, Sidious takes him to a Separatist prison, where Count Dooku tortures him for information about the Shadow Collective. Prime Minister Almec arranges Maul's escape and the latter then heads back to Zanbar to command the Death Watch army.
The most likely reason is that the Darksaber itself started disapproving of him as a master, thus becoming heavy and unwieldy. One could theorize that the Darksaber started to disapprove of him after his loss to Sidious, but he successfully used it again in the Son of Dathomir comics.
Sidious revealed to Maul that he did not intend to kill his former apprentice, as he still had use for Maul; it was Sidious' hope that Maul would lead the Sith to Mother Talzin, Maul's mother and the leader of the Nightsisters, so she could be eliminated as a potential threat to the eventual Sith rule of the galaxy.

There have been other Mandalorians who have become Jedi, though. The first was Tarre Vizsla, the Mandalorian Jedi who created the Darksaber. Huyang mentions in Ahsoka episode 3 that there have also been few other Mandalorians who have trained to be Jedi in addition to Tarre and Sabine.
Serving as a defining moment on the same level as Luke Skywalker's vision in the caves of Dagobah, Darth Maul's surreal time as a Jedi would serve to cement his beliefs that the Jedi Order had to be exterminated at all costs.
Regardless, based on the season 7 of The Clone Wars, and the fact that Darth Maul was aware of Anakin Skywalker's future and his role as the Chosen One, it is very likely that Darth Maul indeed feared Darth Vader to some extent, and preferred to avoid a direct confrontation with him, at least, on his own.
