Snow can't stand to see a young woman betray a young man's affection—his view of what happened 65 years ago. And so he takes out his old, festering wound on Katniss.
He visits Katniss in District 12 and demands that she tell the country that everything she did was because of her love for Peeta and was not in defiance of the Capitol. He threatens to kill her entire family if she doesn't cooperate.
Lucy Gray's fate is unfortunately unknown (even to Coriolanus). But katniss is associated with her last words to Snow, so Katniss Everdeen is undoubtedly a constant reminder of the girl he either killed or lost, which could be why he despises Katniss so much in the trilogy.
President Snow became evil because he's always been driven by the principle that, if a cause is just enough, then anything done in pursuit of it is justified. Unfortunately for the people of Panem, Snow believed the Capitol's dominance of the other districts was among the most just causes of all.

How did Katniss realize Coin was evil?
Katniss saw that Coin was already showing signs of being as ruthless as Snow, which could be dangerous for the future of Panem. Coin was willing to sacrifice children to turn the Capitol against Snow and make herself look like the hero who swooped in to save Panem.
It later comes to light that the design of the bombs that killed Prim likely belonged to Gale. They looked like Capitol technology, yet that was exactly the purpose behind them; he created weapons that were meant to convince civilians that District 13 attacks were in fact perpetrated by the Capitol.
Coriolanus Snow genuinely believed he loved Lucy Gray, but his possessive and jealous tendencies cast doubts on the authenticity of his love. Snow's possessiveness extended to other people he loved, such as his cousin Tigris, demonstrating a dangerous and possessive pattern in his relationships.
As a youth, Snow was raised on the belief that his family name meant prestige and power. His experience, however, was tempered by the fact that he was an orphan and that the loss his family's fortune due to being invested in District 13 munitions meant that he had spent much of his early life in poverty.
Despite being demented and megalomaniacal, Snow is also honest, and clings to his agreement with Katniss that they do not lie to one another, even if she doesn't.
Tigris may have chosen to have her surgeries to prevent Snow from seeing her as desirable, potentially to stop him from exploiting her. Katniss assumed Tigris' transformation was voluntary, but it's more likely that Snow was responsible for her surgeries, leading to her hatred of him in The Hunger Games.

Lucy Gray follows, an argument ensues and Coriolanus ends up shooting the mayor's daughter after she threatens to expose them, and another rebel named Spruce kills her boyfriend.
Snow hates mockingjays because they're not supposed to exist, thriving in a place where the Capitol sent their jabberjays to die. This directly mirrors Katniss, who becomes the symbol of the rebellion and known as The Mockingjay to all of Panem despite being sent to her death in the arena.
In the end, it is Gale's conviction in the necessity of sacrifice pitted against Katniss' moral incoherence that truly severs any relationship they had or could ever have. Primrose, Katniss' sister, is killed by a firebomb that may have been designed by Gale.
Highbottom even developed a grudge against Coriolanus Snow for his father's actions, maintaining a dislike of the boy throughout his years at the Academy.
Snow begins to make Katniss believe that District 13 dropped the bombs that killed her younger sister Prim. A public execution for Snow is held, where Katniss is to kill him with a bow and arrow. Instead, she shoots rebellion leader Alma Coin, leading Snow to laugh uncontrollably and die from coughing up blood.
She is only told that Tigris used to be a stylist for the Hunger Games, like Cinna, and that Snow fired her himself. Over the years, possibly to deal with the pain caused by her cousin's sadistic rise to power, Tigris tattooed and surgically altered her appearance so much that she looked more feline than human.
Both the book and movie leave Lucy Gray's ending quite ambiguous. Dean of the Academy Casca Highbottom (Peter Dinklage) underscores that point to Snow in the final moments of the film, confirming that she's simply vanished without a trace. Dr. Gaul even wipes all the video footage of Lucy Gray's games.
After watching the film, viewers can infer that these words are about Lucy Gray and her effect on Coryo. After all, his love for her makes him vulnerable and momentarily causes him to deviate from his goals.
Before the Capitol battle, Gale had explained to Katniss his series of bombs designed to feed off human compassion: a small bomb would go off, and then when medical aid rushed in, a second bomb would go off, killing those people as well. Incidentally, it's this exact type of bomb that took Prim's life.
She was only 13 years old when she was killed in The Hunger Games: Mockingjay, and her youth only makes the tragedy that much harder for Katniss to bear after everything else she had suffered. Prim's death is a truly heartbreaking moment.
Katniss did the right thing because, as previously stated, Coin was just as cruel as Snow. She was willing to sacrifice children to turn the Capitol citizens against Snow and make herself out to be the hero who saved the nation.
