Gothel wasn't a good parent and was capable of awful things. She was selfish, cunning, and smart, which made her a great Disney villain. Audiences know that Gothel is bad news, but in certain ways, she's still an underrated Disney villain.

Seeing as how blue hair isn't exactly a natural hair color (perhaps even in the Corona universe), it's likely that this indicates Varian either having come into contact with blue-hair-inducing magic either he was that little (similar to Anna in Frozen), or perhaps he and his mother came into contact with magic sometime ...
After all the adventures throughout the series, Eugene proposes to Rapunzel during the epilogue of the series finale, "Plus Est En Vous", and she ecstatically accepts. The two get married in "Tangled Ever After".
He is a young, brilliant, yet often clumsy alchemist and a friend of Rapunzel, who later becomes obsessed with getting revenge on both her and Corona after they are unable to help save his father due to a blizzard threatening the kingdom and the people's lives.
