The effects for Jaws 3D were mostly handled by a company called Private Stock Effects, who put together shots compositing on video instead of optical. This was a brand new method at the time and by all accounts, it was quicker and easier than using optical effects.
The shark's dorsal fin “stopped” the shark from ever coming too far out into the audience, as by the time its jaws were out into the theater, the fin would've “hit” the top of the screen, ruining the illusion. The 3D also makes the movie look somewhat blurry in 2D.
