Having become a confidant of Adolf Hitler during World War II, Schmidt gained ambitions to become the superior man, leading him to use the prototype of Abraham Erskine's Super Soldier Serum on himself, resulting in him becoming disfigured with a red face, gaining the name Red Skull.
In the 2011 movie, it was established that HYDRA leader Johann Schmidt, played by Hugo Weaving, injected himself with a version of the super soldier serum prior to Steve Rogers' transformation into Captain America.
When Erskine refused to hand it over, however, Schmidt took it by force and injected himself, only to discover that it was incomplete, resulting in Schmidt's face becoming hideously disfigured while he gained his abilities. Schmidt's skin was burned off his face, giving him the nickname of the Red Skull.
The Red Skull inhales the dust of death and his face takes on the appearance of a living red skull; his head loses its hair and its skin shrivels, clinging tightly to his skull, and taking on a red discoloration. The Red Skull survives the exposure due to the effects of the Super-Soldier Formula.
Why does Schmidt look like that in Captain America?

Schmidt's birthday is listed as July 17th, 1982, meaning he's a year younger than Nick, so Nick's season 2 comment can definitely be taken as a plot hole. If audiences are supposed to go by Nick's established birthday, then he, like Jess, was 38 by the time New Girl ended.
In the series finale, a flash-forward reveals that he and Cece have a son named Moses. Schmidt's first name is a long-kept secret of the series, until the penultimate episode of season 6 "San Diego" in which it is revealed to be Winston and his middle name is Saint-Marie.

Assuming the reason for their battle is due to Thor being deceived, possessed, or otherwise out of his mind, Cap would be able to use Mjolnir against him.
However, Red Skull saw his true intentions, informing Gamora that Thanos was, in fact, weeping for Gamora, as he truly loved her as a daughter, and was heartbroken that he had to sacrifice her to get the Soul Stone. Disbelieving, Gamora could not comprehend that Thanos ever showed genuine love for her.
