The reason Dooku joined the Separatists, he said, was that he learned a terrible truth: a Sith Lord called Darth Sidious controlled the Senate. With Obi-Wan at his side, they could destroy the Sith.
Despite this, Dooku had spent most of his life as a Jedi, and his goals were not impossible as a Jedi Master, so his desire to “destroy the Sith” with Obi-Wan might not have been a bluff.
Dooku hoped to have Obi-Wan as his Sith apprentice and went as far as to reveal Sidious's existence to convince him to join him. Obi-Wan didn't believe him and refused, resulting in the two being enemies ever since. Despite this, however, Dooku had a healthy respect for Obi-Wan, considering him a worthy adversary.
So, it's easy to believe that Dooku really meant what he said and hoped that he and Obi-Wan could wipe out all the corruption, including Sidious. Regardless, the Jedi's hubris proved to be their downfall. Dooku revealed a massive part of the Sith plan to them, but they couldn't bear to question their judgment.
Obi-Wan does quite well against every other foe he has faced, if not outright defeated them. But both times he went against Dooku he got easily defeated. Because Qui-Gon was taught by Dooku, so Dooku knows all about Obi-Wan's techniques and fighting style.

Why didn't Count Dooku have a Sith name? He did have a sith name it was Darth Tyranus. However Count dooku was quite different compared to the other sith in the fact that he didn't really submerge himself fully in the dark side and that's why he never had sith eyes.
Indeed he did. Dooku (aka Darth Tyrannus) knew his master's identity. At this point the Jedi thought Dooku was the Sith Master. The kidnapping was planned to reinforce public support for Palpatine while further confusing the Jedi about his true identity.
Although Qui-Gon never felt close with him, Dooku was quite fond of his former pupil, and Jinn's death on Naboo devastated him. The 2012 Legends novel Darth Plagueis showed Dooku's gradual fall to the dark side in detail, and his feelings on the death of Qui-Gon contributed to this fall from grace.

Once a Jedi -- trained by Yoda -- he became disillusioned with the Jedi Order and thirsted for greater power. Dooku voluntarily left the light side behind and became Darth Sidious' dark side disciple, taking the secret name Darth Tyranus and leading the Separatist army.

Maul actually was his Sith name. In the Rebels tv series, Maul says to another character that he once had a real name, but he has long since forgotten it. Palpatine took Maul from his mother and gave him his Sith name as an infant. His real name is lost to time.
