There is no indictation in any of Tolkien's work that Galadriel ever met Sauron. The idea that she did, promoted by the Rings of Power series is based on a subjective (mis)reading of two passages in Tolkien's work.
Galadriel's duel with Sauron also alludes to another passage in The Fellowship of the Ring, The Mirror of Galadriel, where Galadriel states that she can perceive Sauron's mind, while he is unable to do the same because Galadriel states the door is still closed. This is given a visual representation in the film.
Pure dumb luck was probably involved along the way, but the idea that Sauron bumped into Galadriel by chance and somehow wound up exactly where he needed to be is simply too great a coincidence not to have been plotted and manipulated.
In his notes, Tolkien remarks that Sauron saw Galadriel as his equal. Add that to the fact that she's untrusting of Sauron (yes, even when he's in his Annatar guise) and an unwavering, single-minded force, and it's more likely than not that Sauron feared Galadriel — or the potential she held to upend his plans.
Despite her power, Galadriel couldn't match Sauron's ability to wield the One Ring, and it would have ultimately turned against her. Even if she managed to carry the ring, Galadriel's ambition and power-seeking nature would have eventually led to her corruption, making her unfit to deal with Sauron's weapon.
Sauron's deepest fear was that Aragorn would use the Ring against him. With its powers of domination, Aragorn could comfortably take over the entirety of Sauron's dark army. Though this would eventually corrupt Aragorn, it would allow him to destroy Sauron and take his place.
Throughout The Lord of the Rings, Galadriel used her Ring of Power to guard her home and people from Sauron's evil. Additionally, while he was in his weakened state, Galadriel could hold him off through the power of will alone.
Thus, Galadriel's dark form in Jackson's The Lord of the Rings personified what would have occurred had the Lady of Lothlorien given in to temptation and taken the One Ring for herself. She would have succumbed to evil because the Ring was indomitable, even with her power.
Halbrand does not deny his heroism out of bashful humility, though; he knows that as Sauron, he's not the hero she wants him to be for the Southlands -- not when his plans involve scorching it into Mordor. No, Halbrand was never a hero, nor did he ever claim to be.

Galadriel resists Sauron's temptation in her encounter with him in Eregion. And we know that eventually Sauron is indeed defeated by the combined might of the Last Alliance of Men and Elves. But somehow, Sauron returned. 6 And with fewer allies and less chance to defeat Sauron, Galadriel is once again tempted.
She leaps off the ship taking her away from Middle-earth, encounters Halbrand, and eventually saves his life, and in the process, accidentally helps bring Sauron back to power.
Out of her assumed defeat rises Galadriel. She is the same “drowned” Galadriel we have seen in the Fellowship of the Ring when Frodo offers her the One Ring. She stands before Elrond and Saruman facing Sauron on her own with her phial in her hand. Decisively she strips Sauron of every power, driving him to flee.
In the final minutes, Sauron confesses that he's been manipulating Galadriel since they first met — using her as a way to get back to Middle-earth to fight back against his enemies in the Southlands and indirectly form the land of Mordor but also to get closer to Celebrimbor and the Elven smiths.
Though neither is someone you'd wish to annoy, Galadriel is generally considered more powerful than Elrond in Lord of the Rings. Not only is she older than her Rivendell counterpart, but Galadriel witnessed the light from Valinor's Two Trees, giving her a mystic quality.
Morgoth, the first to reign terror upon Middle-earth, was more powerful than Sauron and commanded an army of dragons and Balrogs. While both Morgoth and Sauron were cunning, Morgoth's rule and terror lasted longer and his corruption spread further, making him more formidable in the Lord of the Rings universe.
7. Sauron Feared Galadriel. Yes, that's right. Tolkien's notes talked about how unlike some of the other elves Galadriel immediately distrusted Sauron during Celebrimbor's forging of the rings of power.
Melkor is the most powerful of the Valar but he turns to darkness and is renamed Morgoth, the primary antagonist of Arda. All evil in the world of Middle-earth ultimately stems from him. One of the Maiar of Aulë betrays his kind and becomes Morgoth's principal lieutenant and successor, Sauron.
Meanwhile, a few faithful Númenóreans, led by Elendil, were saved from the flood, and they founded Gondor and Arnor in Middle-earth. Sauron still considered them his hated enemies and he launched a pre-emptive attack on Gondor in S.A. 3429.
Although Sauron's origins are angelic, he becomes captivated by the idea of ordering things as per his own will, which might be a possible reason behind him being lured by Morgoth, a Dark Lord who corrupted countless souls and waged wars against Elves and Men throughout the First Age.
Assuming the One Ring was destroyed, Galadriel's ring would also start to fade, causing Lothlórien to lose its glory and magic. So, when Galadriel refused the One Ring, she wasn't just sacrificing her desire to rule. She knew that she was sacrificing her kingdom and its well-being for the sake of peace in Middle-earth.
She also resisted being offered the ring of power by Frodo following his vision in the mirror of Galadriel, an immense test given the ring's seductive powers. Yet Gandalf's power level exceeds even that of Galadriel, as shown by his rebirth in the Two Towers.
