Edit: ^they can't block bullets(slugs) with a lightsaber! Since the slugs are physical projectiles, they'd be easier for Jedi to stop using the Force. Actually, issue #18 of Dark Lord of the Sith confirmed that lightsabers couldn't block slugs…not that it wasn't common sense to assume before then.
Blaster shots move slower than bullets so that the audience can see the bolt fly across the screens; it makes the action more exciting to see. If the bolts moved as fast a bullets, they'd be invisible to the eye. But in terms of the fiction of Star Wars, they don't move slow enough for anyone to dodge and deflect them.
