Simple answer is that logan was born 1832 and the movie is set in 2029, so by simple maths, we can conclude that he is physically 197 years old. But in days of future past events, which was set in 2023, logan went back to 1973 and again lived ot up to 2029, so emotionally, he is 247 years old.
His body's mutant powers heal him almost instantly, and his skeleton is coated in a nearly indestructible fictional alloy, adamantium. What's more, because his healing ability also affects the aging process, Logan has looked the same age (early 30s at most) for more than 100 years.

As you all know, Wolverine kills Deadpool at the end of X-Men Origins:Wolverine, but somehow Deadpool returns around 30 or so years in the movie timeline later for 2 more solo movies and another one upcoming.
Unlike Wolverine, whose wounds sometimes cause excruciating pain as they heal depending on the severity, Deadpool has some degree of pain insensitivity. Deadpool is effectively immortal, although he has died several times. He is still alive 800 years in the future when the new X-Force encounters him.
Once he was implanted with adamantium, it started poisoning him slowly. His healing ability became weaker and he aged more like normal. Wolverine ages at a slow rate, he's not immortal and he will eventually die. As for him getting weak the adamantium is poisoning him and as he gets older its harder to fight it off.
However, Old Man Logan was from another universe, so this might not affect the 616 Logan. As illustrated several times in the comics, Wolverine can die even if his healing factor is working.
In The Wolverine (2013), Wolverine loses his Adamantium claws, and he regains them in X-Men: Days of Future Past. The original Weapon X storyline revealed the origins of Wolverine's claws and explored more character development for him.
