A fan theory suggests that Boo from Monsters, Inc.grows up to be Andy's mom in Toy Story, but there are flaws in this theory. Pete Docter, Chief Creative Officer of Pixar, debunked the theory and explained that the Easter eggs in Pixar movies are not meant to impact the storylines of other films.
While Kristina Hubbard highlighted that Boo's real name is canonically Mary Gibbs, the same as her voice actor, meaning she can't be Emily and is unlikely to be Andy's mom.
However, Peter Docter, a Pixar director and one of the story writers of Toy Story 2, revealed that the theory is actually false (via ET Online). Docter explained that he does have a backstory for Jessie, but he's not willing to reveal what it is just yet.
