The Continental, recently affixed with the Pennyworth-style subtitle From the World of John Wick, tells the story of Winston Scott. Ian McShane portrays the character in all four films. He's one of John Wick's closest friends and a reliable ally in the battle against the High Table.

Why does Winston call John Wick Jonathan? It is indicative of their relationship, in which Winston is a kind of paternal figure to John. In such relationships the figure of authority will occassionally use the longer, unconstricted version of their subordinate's name, even if it is incorrect.
The Ruska Roma are a crime family, after all, so it's likely that Winston could be John's adoptive father or, at the very least, father figure. That would also explain why Winston is the only character in the franchise to call John "Jonathan."

The Elder told him that his excommunicado status and bounty would be revoked on the sole condition that he kills Winston Scott, who had refused to show fealty to the High Table and give up his position as manager of the New York Continental, and that he will serve the High Table for the rest of his life.

What happened to Winston's brother in The Continental?
Frankie stole a coin press from The Continental to create his own currency and buy his freedom, but the object was switched before being returned to the hotel. Frankie dies protecting his wife and brother, leading Winston to vow revenge against Cormac for his brother's death, setting up a showdown in future episodes.
The John Wick 3 ending showed that Winston's supposed betrayal of John Wick reaffirmed his loyalty to the shadowy High Table. Of course, John survives the attempted assassination and it allows him to escape leading fans to wonder why Winston betrayed John Wick and if he is really an ally after all.
In John Wick, France provides the number 60 and asks, "Are you hear on business, sir?" John replies, "Afraid so, Francis. Why don't you take the night off." Nash explains that this wasn't just because they're old friends but because "I gave him the hint of how many people were in there, and that's why he let me live."

The tattoo across his back reads "Fortis Fortuna Adiuvat," translated from Latin into, "fortune favors the bold." He's assuming that -- I think a lot of people think that he knew you had the bulletproof suit on, so that's how he shot you. [To] give you an edge." The director's comments make it clear that Winston didn't really intend to kill John, despite being ordered to by the High Table.
