Tales of the Jedi reveals that Dooku and Palpatine were working with each other before Darth Maul was killed. While no longer a Jedi, Dooku had not yet become a Sith. The novels reveal that Dooku left the Jedi Order about 10 years before Star Wars: Attack of the Clones.
Dooku voluntarily left the light side behind and became Darth Sidious' dark side disciple, taking the secret name Darth Tyranus and leading the Separatist army. Dooku advanced Sidious's secret plot to take over the galaxy, but forgot that betrayal is the nature of the Sith.
In fact, he even planned on replacing Palpatine before Order 66. Out of all the Sith seen throughout Star Wars, Count Dooku still stands apart from them all. While he was undoubtedly evil, he often had a calm politeness rather than maniacal behavior.
He was the second apprentice of Darth Sidious, the Dark Lord of the Sith, whose plan to conquer the galaxy relied on Dooku leading a pan-galactic secessionist movement against the Republic and the Jedi Order, as he saw both factions as corrupt.

Did Dooku know Palpatine was a Sith?
Indeed he did. Dooku (aka Darth Tyrannus) knew his master's identity. At this point the Jedi thought Dooku was the Sith Master. The kidnapping was planned to reinforce public support for Palpatine while further confusing the Jedi about his true identity.
Legend had it that Yoda—a Jedi who became Grand Master—was trained by N'Kata Del Gormo. A Force-sensitive Hysalrian, N'Kata Del Gormo was trained in the ways of the Force and achieved the rank of Master within the Jedi Order.
He was: Darth Tyrannus. His persona as Count Dooku was better suited to his role as leader of the Separatist faction. If he revealed himself as a Sith publicly, rather than just a former Jedi who left the order because of its supposed corruption, that would have damaged his credibility to most of the Separatists.
While many viewers might describe Count Dooku as evil, he ultimately had a vision in mind for the galaxy, with the hope of bringing peace, justice, and security to his new Empire. He likely believed his version of the Empire would have been far less oppressive than what Emperor Palpatine eventually introduced.
While Dooku may be powerful enough to hide his Sith eyes, there is another reason for his unusual appearance. Dooku's eyes were never yellow because he did not have the same motivation and emotions as other Sith. Dooku was an idealist who left the Jedi because he thought they had lost their way.
After killing Yaddle, Dooku's loyalty to Palpatine was absolute, since Dooku himself believed there was no redemption for what he had done. Therefore, Palpatine repeated the same dilemma with Vader not once, but twice. First, he had Anakin kill an unarmed Dooku, something he knew was against the Jedi Code.
Maul most likely knew Sidious' double role as Palpatine and Sidious when he served as Palpatine's apprentice. He definitely knew about Palpatine's goal of creating a galactic empire ruled by the Sith. Maul knows that Sidious is the Emperor.
In Star Wars Legends, Mace Windu Was Trained By Master T'ra Saa. While little is known about Mace Windu's tutelage, his Jedi Master in the Legends continuity is T'ra Saa, a member of the Neti species. As with all Neti, T'ra Saa is a tree-like plant with the ability to shapeshift.
In his story, Maul poses as a member of a criminal cartel to kill a Force-sensitive thief for Darth Sidious, and experiences a vision of an alternate life as a peace-keeping Jedi, which he denies, much to Sidious' content. The story takes place shortly before The Phantom Menace.
Billaba became Windu's Padawan and trained under the Jedi Master in the ways of the Force. During her training, Windu allowed her to study Form VII variant known as Vaapad. She eventually became a Jedi Knight, renowned for her skills with a lightsaber and favored Form III when teaching other Jedi.
Acolytes, are the Sith equivalent of padawans and they are the lowest rank. Several of them serve under one sith and only a few become his true apprentices.

Supreme Leader Snoke #1 showcases Ren's training under Snoke, who subjects Ren to various physical and mental torments in order to foster his anger and strength in the dark side of the Force.
Had they fought one another at their full potential, Maul's exceptional lightsaber skills would have been difficult for Dooku, but Dooku's knowledge of the dark side of the Force would likely have prevailed.
The use of his Vapaad style would have given him an automatic advantage while fighting against any dark side user. So, while Star Wars fans never saw a knock-down, drag-out fight between these two icons, it seems likely that Windu would've bested the former Jedi.
