Behind the scenes. Ahsoka's white lightsabers first appeared in the TV episode "Fire Across the Galaxy", the season one finale for Star Wars Rebels. According to Dave Filoni, one of the show's creators, the lightsaber blades are white to reflect her non-affiliation with the Jedi or Sith.
Ahsoka is a unique Force-user in the Star Wars franchise - and, consequently, she has distinctive white lightsabers that have rarely been seen elsewhere in the canon.

Why is one of Ahsoka's lightsabers a different color?
Initially, Ahsoka wielded a single, green-bladed saber. But as her training under Anakin Skywalker progressed, she added a second, smaller yellowish-green blade, known as a shoto. Over time, Ahsoka's sabers evolved once more, with both hilts acquiring a curved design and white blades.
In the 2016 Ahsoka novel, Ahsoka fought against an Inquisitor called the Sixth Brother. After defeating him, she took his Kyber crystals as her own. Then, to make her own weapons, Ahsoka healed the crystals, purifying them. That returned them to their original clear state, which made a pair of white lightsaber blades.
Summary. A disturbing theory suggests that Darth Vader kept one of Ahsoka Tano's lightsabers for a darker reason, potentially using its kyber crystal to improve his own blade.
There is not a “rainbow” lightsaber, but there is a “white” lightsaber which could easily be all the colors of the spectrum. I ddi some research on this, and the current canon has most of the lightsabers either being green, blue, or like the Sith, red.
