Interestingly, Scott Bakula's Star Trek: Enterprise went back to the color distinctions from Star Trek: The Original Series. Each of the blue flight suits had colored piping around the shoulders reflecting yellow for command and red for operations.
The black areas are seen on the shoulders and the pants, and the uniforms's sleeves and abdominal area are colored to indicate the individual's division, with red indicating command and helm; gold for engineering, security, and operations; and blue for science and medical (TNG: "Encounter at Farpoint").
Science-research and technical staff wore a Starfleet patch with orange, while medical crew wore light green badge backings and accessories. The colors were changed again with the 2280s uniforms, with green continuing to represent medical personnel, and science and technical staff wearing gray trim.
Why does Kirk wear different coloured uniforms throughout the original Star Trek series (TOS)? For a combination of reasons. Kirk's original tunic was actually an avocado green. But between the lighting and film developing it looked gold onscreen.
What is the difference between red and yellow uniforms in Star Trek?
As far as Starfleet is concerned, there are three central departments on a Starfleet vessel: Gold is for command, blue is for science/medical, and red is for engineering/security. In the days of "Star Trek: The Next Generation," the red and gold would be inverted.
As a communications officer, Uhura is most commonly seen in a red uniform. However, in her first two episodes on the show, “The Corbomite Maneuver” and “Mudd's Women”, her uniform was yellow. For some reason Uhura was transferred from the command division to the operations division.
Kirk (William Shatner) sometimes wore on Star Trek: The Original Series. Pike's green uniform underscored the fact that "Spock Amok" was Star Trek: Strange New Worlds' first comedy episode.
Gold was also reserved for just the captain on board the ship, rather than those in command positions. This explains why Kirk wore gold, and Spock, his second in command, did not. Yellow/gold then shifted in during TNG onwards to represent the operations and security staff, as well as engendering.
So why did the colors change? Once again, the answer is simple and almost mundane. Patrick Stewart apparently didn't look commanding enough in yellow, while Brent Spiner, in his pale Data makeup, didn't look good in red.
Summary. Troi wore civilian clothes for most of TNG to put her patients at ease as the ship's counselor and indicate her position. Captain Picard allowed Troi to wear civilian clothes on the bridge due to her empathic abilities and his disregard for unnecessary regulations.
Kirk's green uniform served an important function in the TOS season 1 episode, "The Enemy Within," which featured an evil, duplicate Kirk. The green shirt worn by the good Captain Kirk helped viewers tell him apart from his twisted doppelganger.
He was a flight control officer - and so he wore red like all the other helmsmen. After Tasha Yar's death he transitioned to Tactical, which meant he had to change his uniform from red to gold.
The cancelation machine NBC's biggest concerns were ratings, but it was also concerned with demographics. Star Trek actually performed well with what would now be considered key demographics; however, these were not considered quality demographics of the era, resulting in less faith in the network.
The blue shirts are worn by the science/medical staff, including McCoy and Spock. As with everything in Star Trek, though, it's a lot more complicated than all of that. In addition to the red shirts belonging to engineers and communications personnel, they are also assigned to the security division.
It makes sense, however, that a separate uniform would be created for Kirk for the particular “evil clone” episode because it helped the audience to understand that these were two different incarnations of the Captain of Star Trek's famous U.S.S. Enterprise.
