By season 3, Ezra grew up being a handsome young man who went under significantly changes. Instead, his hair was cut shorter and he had grown several inches, nearly reaching Hera's height. However, Ezra was still shorter than Sabine and Kanan.
After Kanan essentially avoided Ezra and stopped training him, leaving him without a master, he took it upon himself to follow the tradition, and cut his hair short, to take his place as the lead Jedi on the Ghost crew.
With so many characters with vibrant hair colors, showrunner Dave Filoni may have wanted one character to have hair they didn't need to dye. Characters like Sabine Wren and Jacen Syndulla already have colorful hair, so it's possible Filoni wanted a more earthy tone, considering Ezra's nine-year exile.
Similarly, Ezra Bridger cut his hair short between Seasons 2 and 3 of Rebels. The change signified Ezra's renewed commitment to the Jedi path, which appears to be a commitment Sabine is also preparing to make.
During the fight, Ezra has knocked off the platform leaving Kanan to believe he was dead. After the defeat of the Inquisitor, Ezra appeared before his master, alive but scarred after he was struck in the face by the Inquisitor's lightsaber.
