With Elsa dead, Olaf's connection to her powers is gone, and so he disappears because he can no longer exist. Of course, he is later brought back to life when Elsa is too, but the full sequence of events isn't shown.
Josh Gad confirmed on X, formerly known as Twitter, that he will reprise his role of Olaf in Frozen 3 two days after Iger announced the sequel was being developed, saying “Excited to head back… into the Unknown.”
Olaf is featured in the sequel to Frozen, Frozen II; released on November 22, 2019, in the US. In this film, it is revealed that Olaf no longer needs his personal flurry and now has a layer of permafrost that keeps him from melting.

Who is Elsa's girlfriend in Frozen 3?
There hasn't been any indication that Elsa will have a girlfriend in Frozen III. That said, some fans have theorized that Honeymaren, a member of the Northuldra tribe, will be Elsa's girlfriend in the next Frozen film. Honeymaren was introduced in Frozen II as a resident of the Enchanted Forest.
Though she is succumbing to the fungus, she cannot eat the bitter apple due to its unhealthy effects on unborn babies. When the dying Olaf hears that she is still alive, he uses his last effort to get her safely down onto the beach, where he kisses Kit and dies soon after.

Although Elsa's disability is encoded as a magical ice power, the language the film uses to talk about her condition maps on to the experiences of people with physical, mental, and intellectual disabilities in recognizable ways.
In the case of the young and innocent Olaf, it could be that he is a combined reflection of Anna and Elsa's childhood. Therefore, he doesn't technically count as being his own person and couldn't save Anna.

As Marc Smith, Frozen 2's Director of Story, notes in the documentary, the idea "unifies the movie" since it starts with a flashback featuring Iduna and Agnarr, and it brings those elements together.

Audiences have come to know Anna and Elsa as sisters whose parents tragically died in a sea storm, but Anna was actually a peasant girl in Frozen's initial drafts, and Elsa was a dark snow queen. They were also not related in any way. Originally, Anna had planned to go to Elsa to have her heart frozen.
