She loves singing, is supposedly one of the best vocalists in her family, and it's a big deal for her when Ursula steals her voice. At first it seems Ursula does this only so Ariel can't reveal her identity to Eric - but the true reason is so Ariel can't further control him.
Ursula commands Ariel to sing, as she summons up a pair of hands from her magic cauldron, which slowly approaches her as she sings, and her voice pulsates wildly in her throat. The hands then rip Ariel's voice from her throat, still singing, and proceed to place it inside the necklace, silencing it.
