Marvel's Squirrel Girl might be unbeatable, but when it comes to her defeat of Thanos, there are some interesting lingering questions about the fight. Everyone knows Marvel's Squirrel Girl is unbeatable, as that has become one of the character's defining traits: All she does is eat nuts and kick butts.
However, she notices a spaceship in a field and when she investigates, she runs into Thanos. While the fight isn't shown, Squirrel Girl stands over Thanos' body as Uatu the Watcher shows up to tell her she just saved the multiverse. The Watcher even states its the real Thanos.
She can intuitively know how to beat/pacify an opponent through words (like with Galactus), clever exploitation of inherent flaws in their powers (like with Deadpool), or with pure power (like with Thanos) and adapt accordingly. She is literally unbeatable. Her squirrel features are simply a cosmetic mutation.
All of her adventures within the 616 are canon, which means she's canonically beaten Thanos and Doom (on multiple occasions); and she's canonically defeated most of the major superheroes and villains on Earth. She has canonically claimed to be Unbeatable, on many occasions, and Thor agrees with that assessment.
Kang isn't physically stronger than Thanos, and if the two were to square up in a one-vs-one fight then the Titan would arguably win. However, Kang's knowledge of the multiverse means that would quite literally be several steps ahead of Thanos at all times.
That made me realize that Kang already killed Iron Man, Black Widow, Gamora, Loki, and Heimdall in Endgame and Infinity War. You just don't know it yet. Expect massive spoilers below if you're not up to date with the MCU.

In the graphic novel The Unbeatable Squirrel Girl Beats Up the Marvel Universe, she is shown as being worthy of wielding Mjolnir, becoming Squirrel Thor when she does so.
Thanos was fighting the Illuminati when Doctor Strange used the Darkhold to search for possible ways to defeat Thanos using dream walking, however this caused an incursion that destroyed a reality. The other members of the Illuminati found the Book of Vishanti and used it to defeat Thanos.
