Looking for something to eat, Gringoire admires the graceful beauty of La Esmerelda, a gypsy street dancer, and decides to follow her home. After rounding a corner, she is suddenly attacked by Quasimodo and Frollo.
Charmolue sentences her to death after she falsely confesses to witchcraft and to murdering Phoebus. (Esmeralda is unaware that Phoebus is alive.) Quasimodo attempts to shelter Esmeralda in Notre-Dame, but he is ultimately unable to save her.
20 years later, Quasimodo has grown up believing his mother abandoned him for his deformity, as told to him by Frollo. During the climax of the film, Frollo reveals to Quasimodo that his mother had actually died trying to save him, a fact reflected by his efforts to save Esmeralda.
Frollo in the novel only becomes the villain when Esmeralda enters the picture. His lust drives him insane much like in the Disney version. In the Disney version, however, Frollo is shown to be a man with a god complex and warped morals long before he meets Esmeralda.

Why did Frollo hate Esmeralda?
While hating Esmeralda for being a gypsy and humiliating and evading him, Frollo had a powerful feeling of lust for her, so powerful he was desperate to find her and have her to himself, even if that meant burning Paris to the ground.
She's the love interest of both Quasimodo, the protagonist, Captain Phoebus, the tritagonist and Frollo, the villain. Although Esmeralda ends up with Phoebus and not Quasimodo, she is one of the few heroines not to be obtained by the main character; the first being John Smith.

Esmeralda (French: [ɛs.me.ʁɑl.da]), born Agnès, is a fictional character in Victor Hugo's 1831 novel The Hunchback of Notre-Dame (French: Notre Dame de Paris). She is a French Roma girl (near the end of the book, it is revealed that her biological mother was a French woman).
She was a ravishing young Gypsy girl living a vagabond life as a prostitute. Taunted, despised and even envied by fellow Parisians, her services were lusted after by the wealthy and powerful with obsessive fervor.
Whereas his affection for Jehan causes Frollo to behave generously, his lust for Esmeralda causes him to behave destructively—he hounds Esmeralda to death because he cannot satisfy his lust and destroys himself in the process.
Frollo's belief in fate becomes fanatical when he falls in love with Esmeralda and becomes sexually obsessed with her. Although Esmeralda does nothing to invite his attention, Frollo believes that she has bewitched him and thinks that it is his destiny to either seduce her or kill her.
Madellaine is the deuteragonist of the 2002 film, The Hunchback of Notre Dame II. In the end of the sequel, she becomes Quasimodo's girlfriend and potential wife.
There could be many reasons. The most widely used theory, at least for the Disney film, is the idea of the trinity used for the plot: Frollo sees her as evil, Quasimodo sees her as angelic, and Phoebus sees both the good and the bad. Out of all three, Phoebus saw her as the most human.
However, The Hunchback of Notre Dame is the rare case in which the protagonist, Quasimodo, does not get the girl at the end, at least not in Hugo's novel. Quasimodo is in love with Esmeralda in the novel, but unfortunately, she is hanged at the end of the novel.
He was a conceited, chauvinistic hunter who was determined to have Belle's hand in marriage, even by force if necessary. This addiction turned him into a relentless, treacherous villain, especially when he found out that Belle's love was not for him but for a Beast.
The gargoyle crumbles underneath him, however, causing him to lose his balance. At this moment, a terrified Frollo sees the gargoyle's demonic face come to life and snarl at him. The gargoyle then breaks off entirely, sending Frollo falling to his death into the molten lead (symbolizing Hell).
He died when he fell into a vast lake of molten copper created by Quasimodo and the gargoyles, to ward off the soldiers at the cathedral. He was looking for Quasimodo and Esmeralda on top of the bell tower. He finds them dangling off a gargoyle. He swings his sword at them, but Quasimodo dodges it.
Frollo makes a quick get-away and Phoebus is presumed dead, with Esmeralda, being the only one present, presumed to be the killer. Phoebus, however, is not dead and soon recovers from his injury. But this does not stop Esmeralda from being tried and sentenced to death for attempted murder and witchcraft.
In the story, Phoebus is a vain, untrustworthy womanizer, who falls in love with Esmeralda solely for her beauty (much in the same way that Frollo does). While trying to seduce Esmeralda, he is stabbed in the back by Frollo.
Specifically, some passages in Hugo's novel suggest that a form of mucopolysaccharidosis, a deformity associated with many congenital and hereditary changes affecting the skeletal system, could explain Quasimodo's somatometric characteristics.
The first is during the Festival of Fools, where she performs on stage in a rather sexy red dress. Some compare her to a stripper in this scene (especially when she twirls around a spear she uses as a makeshift pole).
Of course, white Roma exist and it is obvious that in Hugo's mind, Agnès/Esmeralda was nothing but a white woman “with a tan”. But the recurring use of actresses, in later adaptations, whose whiteness is portrayed as approximate points to a commodification of Romani ethnicity.
