As depicted in "Chapter 20: The Foundling," Grogu was rescued from the attack on the Jedi Temple by Jedi Master Kelleran Beq. Beq completed the daring escape that got Grogu to safety, then escaped the attack with his life.
While the first flashback simply revealed that a number of Jedi went to their deaths trying to protect Grogu, this time, we learned that it was Jedi Master Kelleran Beq (played by Jar Jar Binks actor Ahmed Best) who got Grogu away from the Jedi Temple and off Coruscant.
Ahmed Best—who played Jar Jar Binks in the Star Wars prequel trilogy—returned to the franchise as Jedi Knight Kelleran Beq on The Mandalorian. He was the previously unknown Jedi who ultimately rescued Grogu from Coruscant during Order 66.
Initially, the Imperial remnant used the Bounty Hunters' Guild to hire bounty hunters based on the planet Nevarro to capture Grogu, but Mandalorian bounty hunter Din Djarin instead decided to rescue and protect Grogu from the Imperials.
Thanks to Jedi Master Kelleran Beq, Grogu survived Order 66, and thanks to Din Djarin and Ahsoka Tano, the foundling makes his way to a young Jedi Master Luke Skywalker.

Who saved Grogu on Coruscant?
As the knights in the Jedi Temple made a valiant effort at protecting him during Order 66, Grogu was whisked off Coruscant by Jedi Master Kelleran Beq, played by none other than former Jar Jar Binks actor Ahmed Best.
It was believed that Grogu would eventually become a victim of Kylo Ren's destruction of Luke's Jedi Order. However, The Book of Boba Fett revealed that Grogu chose to follow the Way of the Mandalorian rather than become a Jedi, sparing him from Kylo Ren's wrath.

Beq survives the attack on the Jedi Temple, meaning that he's still out there during the narrative of the original trilogy. He could still be out there after the fall of the Empire. There's a possibility of seeing Kelleran Beq again, maybe even bringing Grogu back together with the man who saved him.

In the episode, Mando and Grogu find the former Jedi Ahsoka Tano so that she can train him. Using the Force, she communicates with Grogu and reveals his name to Mando. Fans were conflicted about the name at the time, with some saying they'd rather stick to the Baby Yoda moniker.

Grogu and Yoda's species age slowly, a process which allowed Yoda to live to be 900 years old. Grogu would be 76 years old in Star Wars: The Rise of Skywalker, but it's unlikely those decades would have meant much for his development at his glacial pace of aging.
