The last great struggle between the Jedi and the Mandalorian warlords resulted in a large battle on Mandalore. This caused a cataclysm that scorched much of the planet's surface into lifeless white desert and ending the conflict, the Jedi emerging victorious.
Almost every piece of gear that Mandalorians are known for was designed to kill Jedi. The Z-6 jetpack allows a Mandalorian the power of flight, keeping them out of reach of lightsabers and granting them unique angles of attack. Their tactical heads-up display allows them to target their foes from a great distance.
The New Mandalorians won the war and Duchess Satine Kryze became leader of Mandalore. While the group who became regarded as the "Old Mandalorians" were also exiled and left for the greater galaxy, the surviving traditionalists were exiled to the planet's moon of Concordia, where they evolved into the Death Watch.
Revan personally defeated Mandalore in single combat as the Republic and Mandalorian fleets battled above Malachor V, and the activation of the superweapon known as the Mass Shadow Generator devastated both the planet and the participating fleets.

Why do Mandalorians hate Jedi?
Notably, the Dagoyan Masters of Bardotta regarded the Jedi as thieves and kidnappers because of that practice. Some Mandalorians, most notably members of Death Watch, held a grudge against the Jedi for their perceived crimes against Mandalore during the Mandalorian-Jedi War.
During the Purge, the Empire bombarded Mandalore, slaughtered most of the Mandalore population and collected beskar. The Purge forced Mandalorian survivors, such as sects, akin to the Tribe, to operate in secrecy. The Mandalorians became scattered throughout the galaxy, and some believed Mandalore had become cursed.

After being reunited with Grogu, Djarin delivered him to Luke Skywalker, a Jedi who agreed to take the child into his care and train him in the ways of the Force. After finding the last Star Map and, from it, deducing the location of the Rakatan homeworld, Revan, the Jedi, and the Republic launched the war's final battle. Revan vanquished Malak aboard the Star Forge, and the Republic successfully routed the Sith forces.

To say goodbye, Djarin removed his helmet and let Grogu see his true face for the first time. Din returned to his old ways, tracking down bounties for pay and reunited with the Armorer and his old covert. But upon admitting he had removed his helmet, he was banished.
