The answer to Peaches' whereabouts in Buck Wild can actually be found at the end of Collision Course, when she and Julian married and presumably went off on their own as they planned. Peaches' absence from Buck Wild is simply because she left with her new husband to start their new life together.
Over the course of the film, however, Shira ultimately chooses to leave Gutt's crew, and join the Herd at Diego's side. In Ice Age: Collision Course, she is now married to Diego and wants to start a family with him. She is completely absent from The Ice Age Adventures of Buck Wild without explanation or mention.
Animated movies tend to take a little longer to make than live-action and Ice Age movies have usually had three to four years between releases. If everything works out in the development process, Ice Age 7 could be released in early 2025 or 2026 at the latest.
Some years later, now around 15 years old, Peaches snuck away from her parents before they woke up so she could go to the The Falls and meet Ethan, her best friend Louis reluctantly in tow.
