According to the official Disney blog, red was chosen for Ariel partly to distinguish her from Hannah, and partly because red is green's complementary color. Ariel's tail was always going to be green which is to this day known in-house at Disney as "Ariel" green.
Halle went on to say that she wanted to keep Ariel's red hair because that's an integral part of her character, but that she admired the fact that she is a Black woman with locs and wanted to bring that part of herself to Ariel's look.

One theory is that each of Ariel's sisters represents different oceans that are home to various cultures and ethnicities. It's pretty problematic to have mermaids who all look the same representing such an expansive underwater world.
While Halle keeps Ariel's signature red hair for the film, she decided to keep her natural locs for the role but dyed them a copper colour instead. And she looks so good. “It was super important for me to have my natural hair in this film,” Halley told Ebony magazine.
The original character was known for her signature long, red hair, and trying to honor that in the re-make while also showcasing Bailey's natural hair and locs was important to the production.

In the animated film, Ursula was a villain who enjoyed messing with people and getting what she wanted. In The Little Mermaid live-action, however, Ursula's backstory gets an adjustment — she is upgraded to Triton's sister and Ariel's aunt, making her revenge and motivations all the more sinister.
