Davy Jones locked his heart away in a chest because of his love for Calypso, and possibly because of their mutual betrayal. Now, "The Dutchman must have a captain", so after stabbing Davy Jones' heart — killing him — William Turner had to become the new captain of The Flying Dutchman.
Jones carved out his heart in order to no longer feel the grief and guilt at what he had done or any emotion of love again. Because of the pain, Davy Jones would lock the heart away in the Dead Man's Chest and buried it on Isla Cruces, hiding it from the world.
Despite betraying her, Jones still loved Calypso, and in despair and guilt for what he had done, he carved out his own heart from his body and placed it in the "Dead Man's Chest".
