The fact that he escapes death, even just momentarily, gives him a brief sense of getting away with some of what he's done, while his enemy, who he himself has helped turn Katniss against, takes the heavily symbolic arrow. Snow laughs after Katniss killed Coin because he enjoys the irony of the situation.

In order to allay any suspicion, Snow drank the poison as well and gave himself the antidote afterward. However, the antidote was not a perfect solution. President Snow developed bloody sores as a reaction to his brief poisoning.

While vindictive, he is always honest with Katniss, which helps her believe him when he explains that they have both been outmaneuvered by Coin. He dies choking on his own blood, a fitting death since the bleeding sores in his mouth were caused by the poison that he used to kill his political enemies.
What Happened To Haymitch After He Won The Second Quarter Quell. President Snow wasn't too pleased with Haymitch and his actions involving the force field in the arena. As punishment for the stunt leading up to the win, Snow had Haymitch's mother, younger brother, and girlfriend killed.
President Snow has ruled Panem for at least 25 years; at the time of Haymitch Abernathy's victory, he had long ruled alone. He was notorious for his cruelty and his insanity, going so far as to drink poison intended for his original co-rulers in order to ensure they didn't suspect him as the murderer.
Katniss didn't really have the time to consider romance when she was worried about survival. When Peeta and Gale both made their feelings clear, Katniss wasn't entirely receptive despite caring for them both. In the end, her feelings for Peeta and Gale diverged, with Peeta ultimately winning her heart.
