The movie clearly shows that Jack tries to get onto the door with Rose, and then stops as soon as he sees it begin to capsize. It's obvious that it's not buoyant enough to support the weight of both of them.
The door wouldn't have helped either of them much IRL. Whether it was Jack and Rose or just Rose or just Jack, whoever was on the door would have died. Additional weight would have caused the door to become waterlogged over a shorter period of time and they would have sunk anyway.
For fans of MythBusters, however, this is a bit of old news: The gang famously proved that it was plausible both could have fit onto the door and lived happily ever after.

It seems that if the couple had both used the door to keep just their upper bodies out of the water, and if Rose had given him her life jacket to help keep him warm, Jack would have had a much better chance at survival. "Jack might have lived, but there's a lot of variables," said Cameron.

Although Rose changed her name to “Dawson” to honor Jack, used this name during her acting career, and ultimately revealed she never got over Jack, she moved on and got married at some point in her life.
Talking to the magazine, James Cameron said, “And the answer is very simple because it says on page 147 [of the script] that Jack dies. Very simple. . . . Obviously it was an artistic choice, the thing was just big enough to hold her, and not big enough to hold him.”
