Beauty starts to feel better, but she's still afraid when she first sees Beast. He quickly calms her fears: he knows how ugly he is, but he doesn't mean her any harm. Just as she starts feeling comfortable with him, though, he asks her if she'll marry him!
At the point the movie is supposed to take place, Belle still considered herself a prisoner in the castle, and was not truly friends with the Beast at that point, though she had begun to accept him. This takes not too long after she was saved from the wolves, she had started to warm up to the Beast a little.

What happened when beauty kissed the beast?
One day Beauty saw in the magic mirror that the Beast was ill and ran to the castle, realising that she loved the Beast. She told the Beast the same and kissed him. The Beast turned into a charming prince and said that he was under a witch's spell, which Beauty broke with her sweet and loving words.
Beauty finally agrees to sleep with the Beast and marry him in the original Villeneuve. The Beast then sleeps beside her during the night, although no other activities beyond Beauty's mysterious dreams are described.
Although she would not marry him, the Beast still treated her with extreme kindness, and let her go home to visit her sick father as long as she promised to return in a week. She returned late and found the Beast close to death, then realized she loved him, and agreed to marry him.
Then, there's magic rain and the Beast gets healed and transforms back into the Prince. When he approaches Belle, the Prince says, "Belle, it's me." After she realizes the man before her is indeed the Beast, they kiss and the enchantment over the castle and the servants is broken.
The Beast falls in love with Beauty and has to wait and hope that she falls in love with him. She takes a while to realize that she loves him when she dreams that The Beast is dying without her. She returns and confesses her love for the Beast and they marry and live happily ever after.
Gaston pursues Belle, determined to marry her, as she is the most beautiful girl in the village and thus the only one good enough for him. He also finds her independence to be a thrilling challenge, and shows disdain for the Bimbettes who constantly fawn over him purely because of his appearance.
In his final act of selfless sacrifice, after sharing a ballroom dance with Belle, the Beast finally releases Belle in order for her to tend to her ailing father, despite that it would greatly upset him and would prevent the curse from being broken, because he indeed loves her.
Beauty testified she chose to stay with him, so he didn't kidnap her, and he captured her heart by becoming loving, caring, and giving. The Enchantress turned him back to be as beautiful outside as he was inside, though previously she had made him as ugly as he was on the inside.
In the 2017 remake, she knows. The servants tell her everything except how the spell can be broken. In the original animated movie, though, there's no indication whatsoever that she knows he was once human.

Belle returns to find the Beast dying, and as he expires, her tears transform him back into a human again. The happily ever after goes off the same way, and Belle and the Beast get the same upbeat finale that the movie delivers. That's actually a good thing.
In both versions of Beauty and the Beast, the pesky curse that trapped the Beast in his animal form is eventually broken. When Belle sobs over his injured body, her tears deactivate the spell. With proof that he can love and be loved in return, the Beast is magically returned to the human race.
