Realizing she is the fifth spirit herself, Elsa explains to Anna that they are the bridge between the people and the magical spirits. Anna then becomes Queen of Arendelle and accepts Kristoff's marriage proposal. Elsa becomes the protector of the Enchanted Forest, and visits Arendelle regularly, with peace restored.
The easiest answer for why the Frozen women don't count is simply that Elsa is a queen in the first movie, and gives up her crown for Anna to take over in Frozen 2. They are therefore Queens and not Princesses. But, as we've seen, royalty isn't even a condition of entry, so that alone shouldn't rule them out.

Does Olaf stay dead in Frozen 2?
In Frozen 2, viewers do get to see Olaf's resurrection, as the snowflakes gathered up by Gale, the wind spirit, are brought to Elsa so that she can re-make Olaf's snowman body and bring him back to life.
There hasn't been any indication that Elsa will have a girlfriend in Frozen III. That said, some fans have theorized that Honeymaren, a member of the Northuldra tribe, will be Elsa's girlfriend in the next Frozen film. Honeymaren was introduced in Frozen II as a resident of the Enchanted Forest.

Not only is Anna marrying Kristoff, she has Olaf & Sven as well. We also saw at the end of Frozen 2 that their responsibilities are taking them somewhat of seperate ways, although not completely. It only makes sense that Elsa gains her own companion as well.
Moana 2 does not have an official release date, but it will likely be announced in the future. As of early October 2023, Disney has not officially announced the development of Moana 2.
