The magical sneak peek — which aired during SYFY's Harry Potter marathon Monday evening — introduces us to Highwing, a forerunner to Buckbeak. In fact, we wouldn't be surprised if it's one of his ancestors.
Highwing (b. circa 1877) was a female Hippogriff that lived in the 19th century. Inhabiting the Highlands of Scotland in the 19th century, she regularly found herself the target of wizard poachers, though she was ultimately saved and tamed by an unidentified student.
The Coastal Vivarium will reveal itself to you after you've collected 10 beasts and started The Plight of the House-Elf Side Quest. If you've done The High Keep Main Story quest, you'll likely have rescued quite a few that were locked away in there, including Highwing.
Head to the Room of Requirement and into the Vivarium and conjure up a breeding pen by using your Conjuration spell. Place both a male and female Beast of the same species and wait 30 minutes in real-time to produce an offspring. And that's it!

Is Highwing or broom faster?
What is the actual point of the flying mount? It's clunkier, harder to land, takes longer to mount and dismount, and it's max speed is slower than the brooms minimum.
This is The High Keep quest, which unlocks Highwing as a flying mount on completion. You have to sneak into the castle, complete a variety of puzzles, and then rescue Highwing from Rookwood's poachers. After you've escaped Falbarton Castle, you can use Highwing as a mount at any point.
Caligo, also referred to as an Onyx Hippogriff in prerelease marketing, is a purple-black male hippogriff in Hogwarts Legacy. He is an exclusive pre-order bonus for all editions of the game; if the game was pre-purchased, he becomes available as a Flying Mount after completing the main quest The High Keep.
Loyalty. Buckbeak, later renamed Witherwings, was a male hippogriff. He lived with Rubeus Hagrid during Harry Potter's third year at Hogwarts, along with a few other hippogriffs. He was later unfairly sentenced to death, when he attacked Draco Malfoy after being taunted and provoked.
The Hippogriff is obtained after completing the main story quest “The High Keep.” Hippogriffs move slightly slower than brooms, but they can change their elevation at a faster speed.
Hippogriff is one of the beasts found in Hogwarts Legacy. Hippogriff only come in a select few colors such as the white-grey, brown, dirty blonde (female exclusive), onyx (pre-order exclusive), and a special black coloration.
All magical beasts that you can capture and place in your Vivarium are breedable in Hogwarts Legacy, except for one: the phoenix. This means you can breed anything from rare creatures like unicorns and hippogriffs, to cat-like kneazles, if you prefer tamer and cuter companions.

The Thestral is a Beast that is unlocked after completing The High Keep main quest, the same as the Hippogriff. You'll only be able to mount a Thestral if you've bought the Deluxe or Collectors Editon of Hogwarts Legacy. Other than that, the Thestral has the same behavioral patterns as the Hippogriff.
Best answer. Sadly, nope. You can't breed highwing or any magical creatures in Hogwarts Legacy. But, you still get to interact with them in other cool ways throughout the game!

To get mounts in Hogwarts Legacy you need to complete the mission called The High Keep. It's a main mission quest after the second trial - Charles Rookwood's Trial - and starts with meeting Natty near some old castle ruins, where you'll also have to climb the battlements in Hogwarts Legacy.
