It's likely they had enough beskar to outfit a small army of Imperial troopers, or even plate a small ship to make it indestructible.
During the Purge, the Empire bombarded Mandalore, slaughtered most of the Mandalore population and collected beskar. The Purge forced Mandalorian survivors, such as sects, akin to the Tribe, to operate in secrecy. The Mandalorians became scattered throughout the galaxy, and some believed Mandalore had become cursed.
When Djarin reunited with the surviving members of the Tribe on Glavis Ringworld, the Armorer informed him that beskar was only for armor, not weapons, as the spear was capable of piercing Mandalorian armor. Djarin had her melt the spear and reforge it into a garment for the foundling Grogu.

Did Captain Phasma wear Beskar?
Phasma's armor appears very similar to Mandalorian beskar, as it effortlessly deflects a blaster bolt fired by Rose Tico in The Last Jedi. While The Mandalorian shows that the remnants of The Empire are in possession of beskar, this is not canonically what Phasma wears.
What makes much of the armor in The Clone Wars different from Din Djarin's or Bo-Katan and her Nite Owl's is that it isn't pure Beskar. The Mandalorian makes a point of saying that he finds pure Beskar, which is the metal in its best and strongest state.
Jango Fett's armor was partly made of durasteel, and General Grievous had some parts of his body made of this material. Darth Vader's armor was mostly made of durasteel, as was Boba Fett's before he upgraded during the Second Galactic Civil War to armor made of beskar.
As Din's conversations with Bo-Katan in Season 2 made clear, the survivors of the Purge believed the Empire had attacked Mandalore as part of a "scorched earth" policy, opting to annihilate the Mandalorians and their planet after realizing Mandalore would never submit to Imperial rule.

Boba Fett's armor was a suit of customized Mandalorian armor worn by Boba Fett, a human clone who became a bounty hunter. The armor was made from beskar. It consisted of a helmet, a cuirass, vambraces with retractable wrist blades, and a Z-6 jetpack.

One possibility is that he made it using beskar found on Mandalore, as his newly introduced troopers (along with his refreshed body armor) are equipped with the steel-like substance. If that's the case, Gideon likely crafted it in order to be as intimidating and scary as possible to his enemies.
Why Bo-Katan uses the Darksaber so much better than the Mandalorian?
Naturally, the same rules of the Darksaber apply to Bo-Katan, though she wields the weapon with ease against Djarin's captor. This is presumably because Bo-Katan possesses much greater confidence about her identity, even when she has lost faith in her mission to restore Mandalore.
