In the books, Barty Jr. actually died from a Dementor's kiss. However, his fate is much more different than its bookish counterpart. In The Goblet of Fire, he's taken to Azkaban and never seen again.
The Dementor's Kiss was generally considered to be a punishment worse than death. Victims were left in what Muggles would call a 'Persistent Vegetative State': empty shells that were still alive but irretrievably 'gone'.
What happens to Barty Crouch Jr at the end of the book?
Fudge brings a Dementor with him "for protection," and the Dementor immediately performs the Kiss, effectively removing Barty's soul, before he can repeat his confession to Fudge. Crouch Jr. then lives the rest of his life without his memories or sense of self.

Why did Barty Crouch Jr. lick his lips?
In the film version, Barty Crouch Jr. has the habit of licking his lips when threatened, in a snake-like way, to which he occasionally shows while under the disguise of Alastor Moody. This action led to him giving himself away to his father following the second task of the Triwizard Tournament.
His hatred of these sorts of Death Eaters probably stems from being locked in Azkaban for years for his service to Voldemort while others, like Lucius, walked free.
Harry describes Umbridge to Sirius Black, saying that she's vile enough to be a Death Eater, despite not being one. Umbridge is also depicted to be a prejudiced person, despising half-breeds and Muggle-born witches and wizards to the point of firing Hagrid due to his half-giant birth status.
As with many other Death Eaters, Barty had deluded himself into believing that he alone understood Voldemort, and that they were closest to each other due to their commons, to which was in fact not true as Voldemort never desired a friend nor understood human affections.
