Would Mace Windu have been a better master for Anakin?
While Mace Windu can easily be summed up as a firm and unforgiving force, he could have also made a great mentor to Anakin, if he only opened himself up a little more.
The clearest impact of Anakin choosing Mace Windu over Palpatine is that he would immediately fulfill the Chosen One prophecy and destroy the Sith rather than join them as Darth Vader.

So Mace Windu would have gone to arrest Palpatine after Anakin alerts him that he is a Sith Lord. Palpatine would have been subsequently defeated (though likely R.I.P. to Kit Fisto, Agen Kolar, and Saesee Tinn) and killed, and Master Windu would have lived to see another day.
Once he became Darth Vader, Anakin had long become superior to Dooku and Mace Windu. He exceeded their power while still living as Anakin Skywalker, and greatly exceeded their power later in life, both in the force and in lightsaber combat.

Anakin would absolutely walk over Rey. Not only is he the most force-sensitive being ever, but he is extremely skilled with a lightsaber. So if Mace Windu fought Vader in a lightsaber battle, Windu would most likely win, but in terms of dueling skill alone, Vader takes the cake. George Lucus said that Darth Vader was the best duellist to ever live.
As the Chosen One in his prime, it's quite possible that Anakin would have had a strong chance of defeating Palpatine aka Dark Sidious. Palpatine himself told Yoda before their Revenge of the Sith duel on Coruscant that Darth Vader would become more powerful than either of them as he continued to grow in the dark side.
However, had Anakin made a different choice that day, he could have saved the galaxy from Sidious once and for all. Had Anakin foiled Palpatine's plot to take over the galaxy by helping his fellow Jedi arrest or kill the Sith Lord, the Clone Wars would have come to a quick and more peaceful end.
