The American Humane Association (AHA) has fought for animal rights since 1877, but it was not until the tragic death of a horse, during the filming of the 1939 Henry King film, Jesse James, that the AHA was given legal rights to monitor the treatment of animals in films.
When did movies start saying no animals were harmed?
The AHA first issued its famous “No animals were harmed in the making of this film” end-credit disclaimer to The Doberman Gang in 1972. However, at that time it was only sporadically employed, with many studios not seeing animal welfare on sets as a priority.
No states directly address the use of animals in film, though cruelty laws protect animals from abuse and neglect. Industry standards, like those issued by the AHA, most directly target the treatment of animals during film making.
In 1822, an animal protection act was passed which prohibited the mistreatment of horses, asses, mules, cattle, oxen, sheep and related animals used in farming and transport. The Society for the Prevention of Cruelty to Animals was founded in 1824 and a decade later laws prohibited animal baiting.
As the activity grew in popularity, so too did opposition to it. By the early 20th century, the United Kennel Club dropped its support and by the 1960s most states had made it illegal. It was not until 1976 that it was outlawed in all states and even then, enforcement was generally lax.

In the 1982 John Milius film, Conan, the Barbarian, horses were thrown into front somersaults with the use of tripping wires. The horses' ankles were cuffed with a wire that led to the rider. When cued, the rider pulled the wire, causing the horses' legs to be swept out from under them.

Surprisingly, no horses died or were hurt throughout the entire season of Game of Thrones. The crew responsible for the care of the horses took impeccable care of the animals used in the show. They were safe and in good care at all times.
This is the number one reason actual animals are not used in movies anymore. For years, the Hollywood movie-making industry has been riddled with stories of animal cruelty and abuse on set, even today.

How do they make horses fall in movies without hurting them?
In this field, the running W or “pull” has had its moment of glory: it is a system of restraints placed on the horse's forelegs and connected to the rider's hand by a cable. By pulling on the cable when the horse is thrown, the forelegs fold under the chest and the fall is inevitable.

Most likely all the animals were treated just as humanely as people's pet ranch animals are and were not abused. The Animal Welfare Act was not passed until 1966 after the movie was made so it is possible the animal care standards were reduced compared to what is standard today.
