So Mace Windu was born around either 86 or 83 BBY making him 54 years old when we meet him in The Phantom Menace and 67 years old when he died in Revenge of the Sith.

Why was Dooku never a Darth?
While Dooku was certainly evil -- and even had a Darth sobriquet, Tyranus, that he rarely used -- he was never quite a Sith, at least not in the true sense. Unlike those who espoused the Sith doctrine, Dooku wasn't motivated by hatred or fear, but by the same purpose that drove him as a Jedi.
He was: Darth Tyrannus. His persona as Count Dooku was better suited to his role as leader of the Separatist faction.
