After the Battle of Endor, Leia trained as a Jedi with Luke, but left the Jedi path after sensing it would result in the death of her son. She returned to the political arena, where the New Republic had reached an uneasy peace with the remnants of the Galactic Empire.
Leia's Force abilities and her lack of awareness of her true identity also contributed to Vader's inability to sense their familial connection. Vader's denial of Anakin Skywalker's legacy and his fear of getting hurt again prevented him from realizing the truth about his children until later in the original trilogy.
Years later, she was instrumental in the creation of the New Republic, and was elected to the position of Minister of State, before becoming Chief of State, serving twice in that office. Due to her powerful Force heritage, Leia, following her family's legacy, became a Jedi Knight in the New Jedi Order.

Ultimately, like Anakin Skywalker being Darth Vader, this is the result of the fact the films went through a lot of drafts. Luke Skywalker and Leia Organa were not originally intended to be related, nor was she intended to be Force-sensitive, hence why Vader didn't mention it despite their proximity on the Death Star.

Darth Vader didn't learn he had a daughter until Return of the Jedi, when he stood before Emperor Palpatine. The Emperor's power probed Luke's mind, attempting to goad him to fall to the dark side, and he discovered Leia's existence. "Sister," the Emperor taunted.
Leia Organa has been using the Force long before her Jedi training, but her use and strength became more tangible after training from Luke. Leia's use of the Force was not always noticeable to Palpatine and Vader, as it was more subtle in her rhetoric and they were not present at Senate meetings.
Obi Wan was assigned to watch over Luke . To guard and quide him as best as he was able. Obviously Yoda's choice for Obi Wan to do so singled out Luke as the preferred Jedi candidate in the future. With Leia only as a last resort.
The effort killed her, but she was successful nonetheless, and her son and her student worked together to destroy the Emperor. Leia succeeded where Luke had failed, proving she was a better Jedi Master in the Star Wars saga.

While little is known about Yoda's species, we do know, however, that they're incredibly gifted in the Force. Both Jedi Master Yaddle, and now Grogu, hold great Force powers, but no Jedi Master has ever held greater power than Jedi Master Yoda.
