Ultimately, Palpatine's genius evil plan revolves around corrupting the young Jedi Anakin Skywalker and turning him to the Dark Side. Padmé's death would serve to push Anakin further toward the Dark Side as his rage and anger built to a crescendo.
It all begins with Palpatine, who wants to kill Padmé in order to drive Anakin closer to the dark side. He wisely tasks Count Dooku with taking her out because Palpatine doesn't want her death tied back to him. Of course, Dooku takes a leaf out of Palpatine's book and decides to task Jango Fett to kill Padmé instead.
The attempt was carried out by Zam Wesell, a partner of bounty hunter Jango Fett who himself following orders from Count Dooku, leader of the Confederacy of Independent Systems so that it could gain the backing of Nute Gunray and the Trade Federation under the condition that Amidala was killed.
It was also part of Darth Sidious' plot to ensure the passing of the Military Creation Act, of which Amidala was one of the leading opponents. The first attempt initially appeared to be a success, but Senator Amidala was found alive. The second attempt, however, was foiled by Jedi Obi-Wan Kenobi and Anakin Skywalker.
The only explanation given in Revenge of the Sith for Padmé's death is that because there is nothing wrong with her physically, she has lost the will to live after seeing Anakin turn to the Dark Side.

Did Anakin regret killing Padmé?
Anakin does not have even the slightest bit of remorse. By the end, he feels nothing but anger. Although he feels regret for killing Padme, he still helps the evil Emperor. The film ends with Anakins standing side by side with the man on whose behalf he has committed all his crimes.
He did find out. Once he learnt of Luke's existence, Vader of course understood that Padme didn't die as a result of his Force choke. For the first time in decades, Vader had a motive to overthrow his Master.
Anakin Hated Obi-Wan Because of an Imagined Relationship With Padme. Although Padme and Obi-Wan's affair couldn't have been further from the truth, Anakin apparently built up a scenario in his mind, which was only heightened by the Jedi Council's obfuscation in other areas.
Because of Anakin's attachment to his wife, her potential death was the perfect excuse to step in and make false promises about the Sith. Palpatine even offered a way to save Padmé, and that the Sith could help preserve life. Of course, he never intended to save her, as she'd complicate his plans for Anakin.
Why did Anakin Force choke Padme? He Force Choked her in a momentary loss of control and paranoia resulting from Obi- Wan's badly timed entrance. Some people say Obi Wan came out of Padme's ship to save her from being harmed, but seriously watch that scene again.
Anakin's Force Choke begins the series of injuries that ultimately leads to Padme's death, and convinces Obi-Wan to fight him. Despite this, when Anakin learns of Padme's death, his immediate reaction of grief and regret shatters everything in the lab with a powerful force shockwave.
Why didn t Anakin turn on Palpatine after Padmé died?
Anakin really didn't have a choice. If he attempted to leave, and start a new life, Palpatine would just send the Imperial Military to kill him. If he killed Palpatine, Tarkin would probably send the entire Imperial Military to kill him.
Did Palpatine know Anakin would fall in love with Padmé?
Being a master manipulator, Palpatine knew about Anakin and Padmé's secret relationship from the very beginning. It was he who brought them together as adults, manufacturing an assassination attempt that would force the two to reunite.
Palpatine, motivated by pride and a desire to see his homeworld become a part of the greater galaxy, sought to quietly undermine his father's political agenda during the 65 BBY election season. More importantly, however, it was the rift with his father that indirectly led to his future as a Sith.
This fell in line with various fan theories and non-canon novelizations that suggested Obi-Wan and Padmé had an affair sometime during the Clone Wars. In the Star Wars prequel movies, Obi-Wan often has a duty to protect Padmé, but there was never any sense of romantic feelings.
Every time she speaks, he remembers Padmé. Fighting alongside Sabé reminds him of fighting alongside his wife. While that is certainly painful enough, it's also reminds Vader of the man he used to be, a past he had long ago attempted to kill and bury. However, the memory of Padmé via Sabé won't let his past stay there.
Then, Vader also opened the Doors of the Dark Side and entered. Once inside the spiritual realm, Vader went through various trials, but eventually, he found Padmé. All indication was that Vader could have brought her back to life just like Momin did with his body. But Padmé refused to come.
The added risk Darth Vader takes in allowing children to live in a situation where he could have killed them proves that he regrets killing Younglings and will avoid harming any more children for the rest of his days, though intense intimidation is a dark strategy to avoid repeating his Youngling massacre.
In fact, both Vader himself and Padmé's last words were re-contextualized previously in Darth Vader #6 by Pak and Raffaele Ienco, where Vader discovers her dying words upon stumbling onto a holorecording of her death as seen in Revenge of the Sith.
When Anakin had to choose between losing Padme — fearing that she might die in childbirth — or turning to evil to “save” her from death, he chose evil. His desire to “save” her at all costs led Anakin to the dark side. For him, the dark side became a means of saving his loved one.
Before Padmé's death, she still believed there was still good left in Anakin, and that one day he could be redeemed. During Anakin's time as the Emperor's enforcer, he continued to suffer from grief over Padmé's death, and guilt over his supposed hand in it.
However, the animated series and comics are now revealing that the Sith Lord showed what Padmé meant to him even after his transformation. Considering his position as a servant of Emperor Palpatine, it can be assumed that Vader eventually moved past his feelings.
