The ring was gifted to an Elven High-King and passed down through generations. Upon meeting Gandalf, an Elven descendant gifted him the ring to aid in his protection of Middle-earth.
Narya (the Ring of Fire, the Red Ring), from Quenya nár, "fire", was set with a ruby. Its metal is not stated. It gave its wielder resistance to the weariness of time, and evoked hope and courage in others. Why is Saruman afraid of Aragorn?
Bloodlines are very important in Tolkien's stories, and it makes a lot of sense that Sauron would fear the great-grandson of the man who cut off his hand. Aragorn carried the blood of Numenor with him. His genetic connection to the heroes of the Second Age established him as a dangerous opponent of Sauron.
He would not want to take the chance that the Ring might corrupt him. If it wouldn't, it wouldn't, but Gandalf doesn't want to risk it. The One Ring is definitely a corrupting force. And if Gandalf were to be corrupted, the people of Middle Earth would have no chance against Sauron.

Celeborn was the Lord of Lothlórien and husband of Galadriel, Lady of the Golden Wood. He was said to be one of the wisest Elves in Middle-earth at the end of the Third Age. He played an important role in many battles in the First and Second Age.

He is, after all, from a younger generation than Galadriel herself, she being his second cousin once removed, and while one can play around with his unknown birthdate (he might conceivably be older than Galadriel if you push Curufin back in time and Finarfin forward), it is a stretch to make him substantially older.
Of course, Sauron-in-disguise had been manipulating the elves to make something that he would later be able to control with the One Ring (though he hadn't made it yet). Thankfully, Galadriel put the pieces together before his deception went too far— but she said nothing, and the Three Rings were made.
At the end of Fellowship of the Ring, Frodo and his companions visit her. Frodo even offers her the one ring. Galadriel admits she has long awaited the chance to seize the powerful token. But, she says, if she took it, she would become corrupted herself and rule over Middle-earth as a beautiful but tyrannical queen.
Some external factors kept Sam from succumbing to the One Ring's corruption. The most important was that he carried the One Ring for less than two days; it did not have time to wear down his body and spirit like it had the other Ringbearers. Additionally, the One Ring probably wanted Sam to give it back to Frodo.
The contents of Tolkiens' notes and other works weren't covered and were thus off-limits to the filmmakers. That's why Gandalf's mind coincidentally went blank — he legally couldn't name the wizards. So, the writers had Gandalf exploit a loophole by alluding to the two Istari without explicitly mentioning them.
