Several reviewers have suggested that Gideon may be actively attempting to emulate Darth Vader, one of the major characters from the Star Wars franchise who had been an agent of the Empire.
Not content to let his troops have all the fun, Moff Gideon also created his own beskar armor. On first blush, it looks largely the same. It's almost easy to not realize that his chest plate is much thicker and that the rest of his body is much more armored. (The cape is an effective distraction.)

Is Moff Gideon a Sith?
At the time of The Mandalorian story, it is pretty clear that Moff Gideon is not a Sith Lord even though he has the Darksaber in his possession nor does he have any links to the Jedi. Moff Gideon is nothing more than one of the Empire's existing bad guys who officially worked for the Imperial Security Bureau.
Even if he had the wrong idea, he did want to rule Mandalore with the Darksaber. Meanwhile, Mando had given up that right, so the Darksaber was doing its best to find a new wielder. Thus, it looks like Mando won't be able to use the Darksaber until he takes responsibility as a Mandalorian leader.
Yes, the Empire has been defeated and did officially surrender by this point in time, but Gideon isn't going to concede or surrender himself. He's looking at a bigger picture... or at least, as big as his eyes can see. Palpatine isn't dead, and Moff Gideon knows this.

Moff Gideon's Cloning Was Nothing To Do With Palpatine
An egotist at heart, Moff Gideon had his own project - to create an army of clones based on himself, with the addition of the Force. Moff Gideon further hoped to take command of the Empire, and lead them to conquer the galaxy.
Elia Kane appears frequently as Moff Gideon's right-hand woman, always stoic and doing her job well. She usually joined Gideon in his activities, like checking on the Dark Troopers and taunting Grogu.
But the most likely reason why Moff Gideon chose to model his armor this way is due to the history the Mandalorians have with Darth Maul. During Star Wars: The Clone Wars, Darth Maul took over Mandalore and laid claim to the Darksaber.

What happens to Moff Gideon at the end of Mandalorian?
While it may not seem like it on the surface, Moff Gideon dies far more than just once in the finale. The most obvious death is the one he suffers while fighting Din and Bo-Katan. The two Mandalorians fought Moff Gideon with ferocity and let him die in the fire that consumed his base.
He had the Darksaber, and at that point, lightsaber-wielders typically indicated Force-sensitivity. But the Darksaber's history turned out to be much deeper than that, and Gideon showed no signs of Force-sensitivity in Season 2. He wielded the blade with skill, but he never tapped into any kind of Force powers.
Pair that with his obsession with capturing Grogu as a midi-chlorian "donor," and it's very possible that he's hoping to transfer Baby Yoda's Force abilities to himself and become a full-fledged Sith to restore the Dark Side and the Empire in the aftermath of Darth Vader and Emperor Palpatine's deaths.

According to the rules, Darksaber must be won by combat, which isn't how Bo-Katan received the sword. The Armorer doesn't recognize Bo-Katan as its owner since she didn't fight for it. That being said, Bo-Katan did try to earn it the correct way by going after Moff Gideon.
